Stetson Harris grew up in New York, where cheesecake is not a special occasion. It’s in every deli, every diner, every corner bakery, dense, tall, unfussy, and taken entirely for granted.

Then he moved to the Midwest and couldn’t find it. Not the airy, sweetened kind that passes for cheesecake in most places , the real thing. So he started making it himself, working from the recipe he grew up on until it tasted like home.

Friends asked for one. Then their friends asked. Thirty-five years later he’s still the only person who touches them: he mixes every batch, bakes every cake, and boxes every order himself in his kitchen in Kansas City.
